You will need:
1 lb lean ground beef
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1/2 white onion, chopped
2 tbsp garlic
2 cups minute brown rice
1 tsp oregano
1 6 oz can tomato paste
2 cups water
1 cup Italian 4-cheese blend
Salt and pepper
3-4 dashes of Worcestershire
1 tsp beef bouillon powder
Start out by browning the ground beef in a non-stick skillet. When about half way browned, add in the bell peppers, onion and garlic. Continue cooking until beef is completely cooked through and veggies start to become tender. Drain the fat.
When drained, add in the tomato paste, water, beef bouillon, oregano, Worcestershire sauce and salt and pepper (Quick Tip: I found it easier to use a large measuring cup, add in the water and then add in the tomato paste and mix well before adding to the skillet - better consistency!). Mix well and then add in the rice; mixing well. Allow to come to a gentle boil, reduce the heat to low, cover and allow to simmer for about 10 minutes or until rice is tender.
When serving, add a little bit of the Italian cheese blend to the top, and viola! This recipe is definitely a keeper!
