One thing that I am committed to this year, is to make sure kids have yummy lunches, and not just the same old lunch meat or pbj sandwiches! Tonight, my son made these pinwheels, with some oversight from Mom! Super easy and makes enough for two pinwheels per day. He can either heat them at lunch or eat as is.
1 can of refrigerated crescent rolls
1 packages (apprx. 8 oz. deli-style ham)
1/2 c. shredded cheddar cheese
Directions:
Pre-heat your oven according to the instructions on the crescent rolls. Remove rolls from their package and turn onto a parchment paper lined baking sheet. Press the crescent roll seams together and also try to press/expand the dough just a bit. Top with the ham followed by the cheese. Begin rolling in a tight roll; then slice into 1/2" to 3/4" intervals. Lay flat on the parchment paper and bake according to the crescent roll directions, typically 10-12 minutes.
When cooled, put the pinwheels in a storage container and store in the fridge until you're ready to pack your lunch. Talk about an easy-peasy and delicious lunch!
This will go nicely with some string cheese, carrot dippers and oranges! Gotta keep lunch as nutritious as possible for my children! Next, thinking about a variation o f this using turkey and pepper jack - yum!
