1 package shredded rotisserie chicken, or 2-3 boiled and shredded chicken breasts
5 hardboiled eggs, peeled
approx. 1/3 c. mayo
approx. 1/3 c. mustard
salt and pepper, to taste
Directions:
To get started, boil the five eggs until cooked. While those are cooking, I used this time to roughly dice the chicken. Once the eggs are done and cooled, shell the eggs, remove the yolks and put into a separate bowl, and roughly chop the egg whites. Add the egg whites to the chopped chicken.
In the small bowl, mash the yolks with the back of a fork until finely ground and no large lumps are present. Add in the mayo, mustard, salt and pepper. These amounts are approximated and really go by taste test, so add the ingredients until desired taste. Add in the chopped chicken and eggs. Viola! That's all there is to it! So easy, that my son made all of this with very little guidance from his mama! And it made enough to last three to four days!
