1 ½ lbs frozen, cooked shrimp (could do fresh and raw also, but for this recipe and to save time, I chose frozen and cooked!)
1 tbsp minced garlic
1 tbsp finely chopped cilantro
Juice of 1 lime
1 tbsp chicken broth (or water, if you don’t have chicken broth)
3 tbsp olive oil
2 tbsp sriracha hot sauce
Salt and pepper to taste
First, un-freeze the shrimp by putting them in a colander and running cold water over them.
Next, mix the garlic, cilantro, lime juice, chicken broth, 2 tbsp olive oil, sriracha, salt and pepper in a mixing bowl.
Then, I grabbed a large skillet and added 1 tbsp of the olive oil to the skillet and warmed over a medium heat. Add in the shrimp and about half of the garlic-cilantro sauce and let sauté together until the shrimp are warmed all the way through. Lastly, I added the shrimp and sauce from the pan to a large bowl and added the remaining sauce from the mixing bowl and tossed it all together.
I served this healthy meal with a side of steamed broccoli, a side salad and a slice of onion loaf bread. It was delicious, very nutritious, low-fat, high protein and full of good for you ingredients!
