I used:
- chicken breast meat from one rotisserie chicken
- 1 green pear
- 1 red (gala) apple
- shredded mozzarella cheese
- spring salad mix w/spinach
- glazed walnut and cranberry mix
- balsamic vinaigrette
This was seriously, way too easy and oh so delicious! Simply wash and cut your apple and pear, wash the salad mix, cube up the chicken and put it all together in a deep bowl. Sprinkle with just a bit of the vinaigrette and viola! There was enough left that I was able to take it for lunch for the next few days!
You could easily add in some chopped egg, maybe sub in some raisins and sunflower seeds for the cranberries and walnuts - the variations are endless! I hope you all enjoy this as much as we did :)
