I started with 1 cup of mixed spring greens and spinach, added about 1/2 c. of quartered strawberries, 1/4 c. of blueberries, 1/2 of an avocado (cubed) and some rice noodles to add a little crunch. Add a few slices of grilled chicken breast and top off with a little bit of Raspberry Vinaigrette.
Absolute perfection! Next time, I think I will add just a little bit of red onion to it. Such an easy, colorful and healthy lunch - makes sticking to and eating healthy a heck of a lot easier!
