3-4 small russet potatoes, peeled and quartered
3-4 tbsp margarine or butter
4 oz mozzarella, shredded
salt and pepper to taste
First, make sure that your potatoes are peeled and quartered, then boil the potatoes just like you would when making mashed potatoes. Once soft, mash together with the butter, salt and pepper until well mixed. Allow to cool before handling!!
When it's cooled, start with a small amount (maybe 1-2 tbsp) of the mashed potatoes and flatten in the palm of your hand. Sprinkle with enough shredded mozzarella to make a thin layer and then top with another spoonful of the mashed potatoes. Make sure to smoosh it together well enough so that the seams are pressed together and the cheese can't escape!
I cooked these in a non-stick skillet over medium-high heat until they were browned on both sides! Absolutely delicious and great side for any meal!
