You need:
Broccoli florets (either from one head or one bag of chopped broccoli, rinsed)
1/2 red onion, thin sliced into rings and then quartered
1/4 c julienned carrots
1/4 c shredded cheddar cheese
3 tbsp bacon, cooked and crumbled
1/4 c low-fat ranch dressing
Salt and pepper to taste
Simply combine everything in a large dish and mix well. I made this an hour before dinner and let the mixed salad sit in the fridge until ready.
Seriously easy and delicious! Even young kiddos won't turn away from this side dish!
