You will need:
2-3 chicken breasts (I just bought a rotisserie chicken from the store and used the breast meat since I had another recipe to make with the rest of the rotisserie chicken)
2 ripe avocados
1/2 jalapeño, finely chopped
1/2 small, white onion, finely chopped
2 tbsp of cilantro, finely chopped
juice from one lime
salt and pepper to taste.
If you are using raw chicken, cook your chicken until done and then shred. If you use a rotisserie chicken, just pull the meat that you want and shred. Cut open the avocado, remove the pit and put the flesh of the avocado in a bowl for mashing. Mash to desired consistency, I like mine pretty well mashed and not too chunky on this recipe.
Add in the jalapeño, onion, cilantro, lime juice, salt and pepper and mix well. I advise making this at least 4 to 8 hours before needed, but letting it sit together overnight really lets the flavors mix well.
If you're using this to make sandwiches, I think it would be awesome with a little bit of pepper-jack cheese. I've also added just a little bit of steamed rice to it and made a meal out of it that way. This is a very quick, healthy and low-fat recipe that is chock-full of nutrients and protein.
