You need:
1 lemon cake box mix
2 tbsp flour
1/2 tsp baking powder
2 eggs
1/3 c veggie oil
1 tbsp lemon juice
Yellow-colored white chocolate chip morsels (our little pieces of gold in the leprechaun cookies!)
About 1/8 tsp green food coloring gel (I used Wilton's moss green and it was just perfect!)
To get started:
First, I couldn't find just yellow-colored chocolate morsels, so I purchased the nestle roll house semi-sweet package that also had pink and yellow chocolates and simply separated the yellows out of the bag. It ended up being about 1/3 c of yellow colored white chocolate morsels.
Start by preheating your oven to 375. Next, start combining the first five ingredients until well mixed. Note: it's going to be sticky and your arms will more than likely be tired by the end of it!
Next, I added in the green gel food coloring and mixed until the batter was consistently colored throughout. Then, add in the white chocolate chips and mix.
Lastly, I used a teaspoon to scoop the batter, then rolled into a ball and patted. I think this makes for a cookie that looks a little nicer and more uniform rather than being mis-shapen. Place on a parchment lines cookie sheet and bake for about 6-7 minutes or just until the edges are starting to lightly brown. Remove and allow to cool on a wire rack for about 30 minutes and then serve!
