You will need:
1 yellow squash, thinly sliced (* if you have a mandoline, it makes slicing the veggies so much easier and more consistently sized slices)
1 green zucchini, thinly sliced
1/3 cup julienned or shredded carrots (I had a bag of already julienned carrots that I used)
1/4 c chopped red bell pepper
1 tbsp minced garlic
EVOO
To begin, add about 1 tbsp EVOO in a non-stick skillet over medium heat. Then add everything else and saute over medium heat about ten minutes, or until the veggies are tender. So easy, packed full of vitamins and healthy for you! If you would like, season with some salt and pepper.
