Ingredients
- 2 tbsp extra virgin olive oil
- 3 boneless, skinless chicken breasts
Salt and pepper to taste
I used a temperature half way between low and medium. Coat the bottom of a skillet with the olive oil and add the chicken. Season the chicken with salt and pepper. When the chicken starts looking golden brown on bottom, flip over. Keep cooking in this manner until cooked through.

- 1 pint of grape tomatoes, chopped into small pieces
- 1/4 c finely chopped basil
- 3 tsp minced garlic
- 1/4 c extra virgin olive oil
- angel hair pasta, boiled
Salt and pepper to taste
Fresh grated Parmesan cheese, optional
Very easy! Combine the tomatoes, chopped basil, minced garlic, olive oil, salt and pepper. Mix well; then add the pasta into it and mix. Add the Parmesan cheese, if desired. Serve as a side to he pan-seared chicken, maybe a nice, fresh Italian antipasto salad, some garlic bread - yum!
