I used:
1 package of beef sausage
1 white onion, sliced thick
about 8-10 small red potatoes, diced
1 tbsp olive oil
1/2 tsp thyme
1 clove of minced garlic
salt and pepper, to taste
Start out with warming the olive oil in a large skillet, add the potatoes and cook for about ten minutes over medium heat, until the potatoes start becoming a little tender.
