4 ripe mangoes
3 tbsp fresh lime juice {approx 1 lg lime}
1 c simple syrup
To make the simple syrup, combine one cup of water and one cup of sugar in a sauce pan, bring to a boil and then remove from heat.
Start prepping the mangoes by peeling them and cutting the fruit away from the seed. Do this with all four mangoes. I used my blender for puréeing, but if you have a food processor you could use that as well. Add the mangoes, lime juice and simple syrup to the blender and allow to blend until puréed.
Once puréed, add to a freezer safe dish. I used my 8x8 Pyrex dish, and allow to freeze for a minimum of seven hours. I made it this morning so that it would be ready for dinner tonight.
Amazingly delicious flavor that is healthier than ice cream, but still satisfies the ice cream craving! Can't wait to make the next batch of sorbet. Am thinking a mixed berry concoction, or key lime... Mmm! Enjoy!
