I used two golden potatoes. Start by cleaning and poking with a fork. To help with the cooking time, I popped these bad boys in the microwave for three minutes, give or take, on the baked potato setting.
Allow to cool a few minutes and slice to desired thickness. Mine were about 1/3 to 1/2" thick. Next time, I think I will cut them just a tad thinner, like 1/4" or so.
Next I lightly seasoned with coarse grind garlic salt and some thyme on one side. I didn't want to over power the flavor of the potatoes. Next, add to the same hot Foreman grill from the grilled pork chops recipe, sprayed with cooking spray to prevent sticking. I allowed them to cook untouched for about ten minutes, then rotated to get more grill marks. Serve with your main dish and enjoy!
