You will need:
1 lb ground beef
1 packet of taco seasoning
1 tbsp EVOO
1/2 sm onion, finely diced
2 garlic gloves, minced
8 oz elbow pasta
2 c chicken broth
1 can (19oz) mild enchilada sauce
1 c shredded cheddar cheese
Prepare the ground beef according to the directions on the back of the taco packet.
In a large skillet, heat the EVOO and sauté the onions and garlic until tender. Add in the seasoned beef, pasta, chicken broth and enchilada sauce.
Bring to a boil, then cover and cook for about 15 minutes. Remove from the heat, stir in the shredded cheddar cheese and then serve! We served this with a side of steamed corn and it was muy delicioso! Buen provecho!
