2 strips of bacon
1/2 white onion, diced
2 cloves minced garlic
1 jalapeno, seeded and diced
1 can black beans, drained and rinsed
Dos XX or your favorite Mexican beer
salt and pepper
chopped cilantro
To get started, I sliced the two strips of bacon in half and then at about 1/2" intervals. I prefer that all of the ingredients in this dish are a little chunkier. Cook the bacon in a small-medium sized pot over medium high heat. When the bacon is cooked through, add the onion, garlic and jalapeno and saute together for several minutes and until the veggies start softening just a bit.
When ready to serve, stir in a bit of fresh chopped cilantro, and then enjoy!
