Ingredients:
1 lb ground beef
1 white onion, coarsely chopped
4 cloves of garlic minced
2 cans diced tomatoes (I prefer the petite diced tomatoes since they're smaller-bite size pieces)
1 can of tomato sauce (could also use one can of V8 to get some extra veggie servings)
1 can of black beans, drained and rinsed (can also use dry beans and soak overnight - my preferred method)
1 can of red kidney beans, drained and rinsed (can also use dry beans and soak overnight - my preferred method)
1 tbsp chili powder
1 tsp cumin
1/2 tsp oregano
1/4 tsp cayenne pepper
salt and pepper to taste
It's really very easy. Cook the ground beef until done. Add it into the crockpot with everything else listed above. Give it a good stir to mix everything really well and then set on low for about eight hours.
This was really delicious, but I think next time I will probably add just a touch more chili powder, cayenne pepper, salt and pepper - maybe even some jalapeños or better yet use Rotel in place of a can or two of the tomatoes - to add more spice. Otherwise it was great and (shhh... don't tell my mom) but it just may be our new go-to recipe for chili! Enjoy!
