Ingredients:
2 lb lean ground beef
1/2 of a white onion, finely chopped
1/2 of a green bell pepper, finely chopped
2/3 c minute rice
2 tbsp worcestershire sauce
1 tsp garlic powder
1 egg
1/4 to 1/2 c ketchup
salt and pepper to taste
Preheat oven to 350 degrees and using cooking spray, lightly spray the bottom of a 9x13 casserole dish.
Combine all ingredients in a large bowl and mix/knead until well combined. Transfer to the casserole dish and form into a loaf; I like to make the loaf wider across and a little shorter so it cooks quicker. Top with additional ketchup if desired and stick in the oven for about 30 minutes. When it comes out, it should be nicely browned and tender.
