You will need:
about one pound of carrots, I used baby carrots
1/4 c honey, I used raw-organic-local honey
1/4 c olive oil
1 tbsp. low-sodium soy sauce
1 clove minced garlic
1 tbsp. brown sugar
salt and pepper to taste
Directions:
I mixed all of the ingredients together in an 8" pie plate (all of my casserole dishes were being used, so I decided to be resourceful and creative!) Make sure to coat the carrots well in the mixture. Then bake in the over for about 20-25 minutes at 400 degrees. Be sure to turn your carrots at least once to allow even cooking! Enjoy!
