I found this recipe on www.hispanickitchen.com and it was a HUGE hit, and so easy so I just had to share with everyone!
Ingredients:
1 lb ground beef
1/2 c chopped onion
2 garlic cloves minced
1/2 tsp salt
1/4 tsp pepper
2 (10 oz. ea) cans mild enchilada sauce
8-10 small corn tortillas
3/4 c shredded pepper-jack cheese
chopped fresh cilantro
sour cream, if desired
Instructions:
Preheat the oven to 350 degrees. In a large skillet, brown the ground beef with the onion and garlic, making sure to break up the beef into smaller crumbles. Pour off the drippings and then season with the salt and pepper. Stir in 1/2 c enchilada sauce from one of the cans.
Pour the second can of enchilada sauce into a shallow dish. You're going to dip the tortillas, one at a time, into the sauce and coat both sides. Then spoon the beef mixture down the middle of the tortilla and roll up. Place seam side down in a 13x9 inch baking dish.
Cover the dish with aluminum foil and bake in the oven for about 15 minutes. Then, remove the foil and pour the remaining enchilada sauce over the enchiladas and sprinkle with the shredded cheese. Bake uncovered for about 10 more minutes or until cheese is melted. Then sprinkle with your cilantro, and add sour cream, if desired.
I made this recipe with some refried beans and cilantro-lime rice and it was so delicious! There were no leftovers!
